About this recipe

This modern take on the traditional New York-style crumb cake combines a tender cake base with an irresistibly thick and buttery crumb topping. It's the perfect treat for brunch or dessert, sure to please any crowd with its delightful texture and flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • Powdered sugar for dusting (optional)

Directions

  1. 1

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.

  2. 2

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

  3. 3

In a separate bowl, whisk together 2 cups of flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with milk, and mix until well combined.

  4. 4

Pour the batter into the prepared pan and spread evenly.

  5. 5

To make the crumb topping, mix brown sugar, 1/2 cup of flour, cinnamon, and melted butter until crumbly. Gently sprinkle this mixture over the batter, starting at the edges and working towards the center.

  6. 6

Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  7. 7

Cool the cake in the pan on a rack, then dust with powdered sugar if desired. Cut into squares to serve.

Chef's tip

This cake can be kept in an airtight container at room temperature for up to 3 days. For best results, don't press the crumb topping down to retain its texture.
