Ingredients

  • 2 cups basmati rice
  • 500g mutton, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup oil
  • 2 tbsp biryani masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp saffron strands
  • 1/4 cup milk
  • Salt to taste
  • Fresh coriander and mint leaves for garnish

Instructions

  • 1. Wash and soak the basmati rice for 30 minutes.
  • 2. In a large pot, heat ghee and oil. Add sliced onions and fry until golden brown.
  • 3. Add mutton pieces and cook until browned. Add tomatoes, yogurt, biryani masala, turmeric powder, red chili powder, and salt. Cook until the mutton is tender.
  • 4. In a separate bowl, soak saffron strands in warm milk.
  • 5. In a separate pot, boil water and cook the soaked rice until 70% done. Drain the rice.
  • 6. Layer the cooked mutton and rice in a pot. Drizzle saffron milk on top. Cover and cook on low heat for 20 minutes.
  • 7. Garnish with fresh coriander and mint leaves before serving.
