Ingredients

  • 2 cups basmati rice
  • 500g mutton, cut into pieces
  • 1 cup plain yogurt
  • 2 large onions, thinly sliced
  • 4 medium tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup vegetable oil
  • 2 tbsp biryani masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1/2 tsp saffron strands
  • 1/4 cup warm milk
  • Salt to taste
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped

Directions

    Soak the basmati rice in water for 30 minutes, then drain.

    Heat ghee and oil in a large pot. Fry onions until golden brown.

    Brown the mutton pieces, then add tomatoes, yogurt, biryani masala, turmeric, red chili powder, and salt. Cook until mutton is tender.

    Soak saffron in warm milk and set aside.

    Boil water with salt, cook the soaked rice until 70% done, then drain.

    Layer the cooked mutton and partially cooked rice in a heavy-bottom pot. Drizzle with saffron milk.

    Cover and cook on low heat for 20 minutes until the rice is fully cooked.
