Ingredients
- 2 cups basmati rice
- 500g mutton, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup oil
- 2 tbsp biryani masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tsp saffron strands
- 1/4 cup milk
- Salt to taste
- Fresh coriander and mint leaves for garnish
Instructions
- 1. Wash and soak the basmati rice for 30 minutes.
- 2. In a large pot, heat ghee and oil. Add sliced onions and fry until golden brown.
- 3. Add mutton pieces and cook until browned. Add tomatoes, yogurt, biryani masala, turmeric powder, red chili powder, and salt. Cook until the mutton is tender.
- 4. In a separate bowl, soak saffron strands in warm milk.
- 5. In a separate pot, boil water and cook the soaked rice until 70% done. Drain the rice.
- 6. Layer the cooked mutton and rice in a pot. Drizzle saffron milk on top. Cover and cook on low heat for 20 minutes.
- 7. Garnish with fresh coriander and mint leaves before serving.
