- 4 medium sweet potatoes
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, pitted and chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.
- Place the sweet potatoes on a baking sheet and roast them in the preheated oven for about 45-60 minutes, or until they are tender.
