  • 1/2 cup panko breadcrumbs

  • 1 egg

  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 1 tbsp curry powder
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1/2 cup chicken broth
  • 1 tbsp brown sugar
  • 1/4 cup chopped fresh cilantro

Directions

    Preheat the oven to 375°F (190°C) and line a baking sheet with foil.

    In a large bowl, mix ground beef, panko, milk, egg, chopped onion, garlic, cumin, coriander, turmeric, paprika, cayenne, salt, and black pepper. Form into 1-inch meatballs.
