Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tbsp curry powder
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 1/2 cup chicken broth
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, garlic, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and black pepper. Mix well and form into 1-inch meatballs.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 5 minutes. Remove from the skillet and set aside.
- Add the onion, garlic, and ginger to the skillet and cook until softened, about 3 minutes. Add the curry powder and cook for 1 minute.
- Stir in the diced tomatoes, coconut milk, chicken broth, brown sugar, salt, and black pepper. Bring to a simmer and cook for 10 minutes.
- Add the meatballs back to the skillet and simmer for an additional 10 minutes, until the sauce has thickened and the meatballs are cooked through.
- Garnish with chopped cilantro and serve over rice.
