Ingredients
- 3 tablespoons unflavored gelatin
- 1 cup cold water, divided
- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 1 tablespoon vanilla extract
- 1/2 cup powdered sugar
- 1/2 cup cornstarch
Instructions
- In a large mixing bowl, combine the gelatin and 1/2 cup of cold water. Let it sit for 10 minutes to soften.
- In a medium saucepan, combine the granulated sugar, corn syrup, salt, and the remaining 1/2 cup of cold water. Heat over medium heat, stirring constantly, until the sugar has dissolved.
- Increase the heat to high and bring the mixture to a boil. Continue boiling, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer. This should take about 8-10 minutes.
- While the sugar mixture is boiling, prepare a 9x13-inch baking dish by greasing it and dusting it with a mixture of powdered sugar and cornstarch.
- Once the sugar mixture has reached the desired temperature, remove it from the heat.
- Using a stand mixer or a hand mixer, slowly pour the hot sugar mixture into the softened gelatin. Be careful as the mixture will be very hot.
- Beat the mixture on high speed for 10-12 minutes, or until it becomes thick and fluffy. It should have the consistency of marshmallow fluff.
- Add the vanilla extract and beat for an additional 1-2 minutes to incorporate it into the mixture.
- Pour the marshmallow mixture into the prepared baking dish and smooth the top with a spatula.
- Let the marshmallows sit at room temperature for at least 4 hours, or overnight, until they are set and firm.
- Once the marshmallows have set, dust a clean surface with a mixture of powdered sugar and cornstarch. Remove the marshmallows from the baking dish and place them on the prepared surface.
