Fluffy Homemade Marshmallows

About this recipe

Enjoy the delightful, fluffy texture of homemade marshmallows. These are perfect for roasting over a fire, floating in a mug of hot chocolate, or as a sweet snack on their own. Made with simple ingredients, they are a hit with both children and adults.

Ingredients

  • 3 tablespoons unflavored gelatin
  • 1 cup cold water, divided
  • 2 cups granulated sugar
  • 2/3 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/2 cup cornstarch

Directions

  1. 1

Combine gelatin and 1/2 cup cold water in a mixing bowl, and let it bloom for 10 minutes.

  2. 2

In a saucepan, mix granulated sugar, corn syrup, salt, and 1/2 cup cold water. Heat on medium, stirring until sugar dissolves.

  3. 3

Turn heat to high, boiling without stirring, until it reaches 240°F on a candy thermometer.

  4. 4

Prepare a 9x13-inch dish, greasing and dusting with powdered sugar and cornstarch.

  5. 5

Pour hot sugar mix into gelatin using a stand mixer on low, then beat on high for 10-12 minutes until thick.

  6. 6

Add vanilla extract, mix 1-2 more minutes. Spread in prepared dish, smooth the top.

  7. 7

Let sit at room temperature at least 4 hours or overnight to set.

  8. 8

Cut and coat marshmallows in sugar and cornstarch mix.

Chef's tip
