Ingredients

  • 3 tablespoons unflavored gelatin
  • 1 cup cold water, divided
  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/2 cup powdered sugar
  • 1/2 cup cornstarch

Instructions

  • In a large mixing bowl, combine the gelatin and 1/2 cup of cold water. Let it sit for 10 minutes to soften.
  • In a medium saucepan, combine the granulated sugar, corn syrup, salt, and the remaining 1/2 cup of cold water. Heat over medium heat, stirring constantly, until the sugar has dissolved.
  • Increase the heat to high and bring the mixture to a boil. Continue boiling, without stirring, until the mixture reaches 240°F (115°C) on a candy thermometer. This should take about 8-10 minutes.
  • While the sugar mixture is boiling, prepare a 9x13-inch baking dish by greasing it and dusting it with a mixture of powdered sugar and cornstarch.
  • Once the sugar mixture has reached the desired temperature, remove it from the heat.
  • Using a stand mixer or a hand mixer, slowly pour the hot sugar mixture into the softened gelatin. Be careful as the mixture will be very hot.
  • Beat the mixture on high speed for 10-12 minutes, or until it becomes thick and fluffy. It should have the consistency of marshmallow fluff.
  • Add the vanilla extract and beat for an additional 1-2 minutes to incorporate it into the mixture.
  • Pour the marshmallow mixture into the prepared baking dish and smooth the top with a spatula.
