  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 2 tablespoons honey
  • 1 tablespoon soy sauce

Directions

  1. 1

Preheat the oven to 375°F (190°C).

  2. 2

Rinse and pat dry the chicken. Season inside and out with a mixture of salt, pepper, thyme, rosemary, and garlic powder.

  3. 3

Rub the chicken with olive oil. Whisk together honey and soy sauce and brush it all over the chicken.

  4. 4

  6. 6

Cover with foil and roast in the preheated oven for 1 hour.

  8. 8

Let the chicken rest for 10 minutes before carving. Serve with roasted mandarine slices.
