Ingredients
- 2 pounds lamb, cut into chunks
- 4 potatoes, peeled and cut into chunks
- 2 tomatoes, diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups chicken broth
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large oven-safe pot, heat the olive oil over medium heat.
- Add the lamb chunks and cook until browned on all sides.
- Remove the lamb from the pot and set aside.
- In the same pot, add the onion and garlic. Cook until softened.

- Cover the pot and transfer it to the preheated oven.
- Cook for 2 hours, or until the lamb is tender and the potatoes are cooked through.
- Remove from the oven and let it rest for a few minutes before serving.
