Ingredients
- 2 cups cauliflower rice
- 1 lb chicken breast, cut into small pieces
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/2 cup plain Greek yogurt
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint leaves
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- 1/4 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee or oil
- 1/4 cup water
Instructions
- In a large pan, heat the ghee or oil over medium heat.
- Add the sliced onion and cook until golden brown.
- Add the minced garlic and grated ginger and cook for another minute.
- Add the chicken pieces and cook until they are no longer pink.
- Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well to coat the chicken with the spices.
- Add the cauliflower rice and water. Stir well to combine.
- Cover the pan and cook for about 10 minutes, or until the cauliflower rice is tender.
- Remove the lid and stir in the Greek yogurt, chopped cilantro, chopped mint leaves, and garam masala.
- Cook for another 2-3 minutes, until everything is well combined and heated through.
