Ingredients

  • 2 cups cauliflower rice
  • 1 lb chicken breast, cut into small pieces
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons ghee or oil
  • 1/4 cup water

Instructions

  • In a large pan, heat the ghee or oil over medium heat.
  • Add the sliced onion and cook until golden brown.
  • Add the minced garlic and grated ginger and cook for another minute.
  • Add the chicken pieces and cook until they are no longer pink.
  • Add the turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Mix well to coat the chicken with the spices.
  • Add the cauliflower rice and water. Stir well to combine.
  • Cover the pan and cook for about 10 minutes, or until the cauliflower rice is tender.
  • Remove the lid and stir in the Greek yogurt, chopped cilantro, chopped mint leaves, and garam masala.
  • Cook for another 2-3 minutes, until everything is well combined and heated through.
