Ingredients

  • 4 egg whites
  • 1/4 cup chopped vegetables (such as bell peppers, onions, and mushrooms)
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • 1. In a medium bowl, whisk the egg whites until frothy.
  • 2. Heat the olive oil in a non-stick skillet over medium-high heat.
  • 3. Add the chopped vegetables and sauté until tender.
  • 4. Pour the egg whites into the skillet and let cook for 1-2 minutes, or until the edges start to set.
  • 5. Using a spatula, gently lift the edges of the omelette and let the uncooked egg flow underneath.
  • 6. When the omelette is mostly set but still slightly runny on top, sprinkle the shredded cheese over one half of the omelette.
  • 7. Using the spatula, fold the other half of the omelette over the cheese.
  • 8. Let cook for another 1-2 minutes, or until the cheese is melted and the egg is cooked through.
  • 9. Slide the omelette onto a plate and serve hot.
