Ingredients

  • 1 pre-made pie crust
  • 3 lemons, juiced and zested
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 4 egg yolks
  • 1 cup water
  • 1/4 teaspoon salt
  • 4 egg whites
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a medium saucepan, combine the sugar, cornstarch, and salt. Gradually whisk in the water, lemon juice, and lemon zest.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Boil for 1 minute, then remove from heat.
  • In a small bowl, beat the egg yolks. Gradually whisk in about 1/2 cup of the hot lemon mixture. Pour the egg mixture back into the saucepan, whisking constantly.
  • Return the saucepan to the heat and bring to a gentle boil. Cook for an additional 2 minutes, stirring constantly.
  • Remove from heat and pour the lemon filling into the pre-made pie crust.
  • In a large mixing bowl, beat the egg whites until soft peaks form. Gradually add the sugar and vanilla extract, beating until stiff peaks form.
  • Spread the meringue over the lemon filling, making sure to seal the edges.
  • Bake for 10-12 minutes, or until the meringue is golden brown.
  • Allow the pie to cool completely before serving.
