Ingredients
- 1 lb lamb, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, minced
- 1 tbsp ghee
- 1 tbsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1 can coconut milk
- 1 cup chicken broth
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
- In a large skillet, heat the ghee over medium-high heat.
- Add the lamb and cook until browned on all sides, about 5 minutes.
- Remove the lamb from the skillet and set aside.
- Add the onion, garlic, and ginger to the skillet and cook until softened, about 3 minutes.
- Add the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper to the skillet and cook for 1 minute, stirring constantly.
- Add the coconut milk and chicken broth to the skillet and stir to combine.
- Return the lamb to the skillet and bring the mixture to a simmer.
- Reduce the heat to low and let the curry simmer for 30-40 minutes, or until the lamb is tender and the sauce has thickened.
- Season with salt and pepper, to taste.
- Serve the curry hot, garnished with fresh cilantro.
