Ingredients

  • 1 lb lamb, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp ghee
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 can coconut milk
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  • In a large skillet, heat the ghee over medium-high heat.
  • Add the lamb and cook until browned on all sides, about 5 minutes.
  • Remove the lamb from the skillet and set aside.
  • Add the onion, garlic, and ginger to the skillet and cook until softened, about 3 minutes.
  • Add the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper to the skillet and cook for 1 minute, stirring constantly.
  • Add the coconut milk and chicken broth to the skillet and stir to combine.
  • Return the lamb to the skillet and bring the mixture to a simmer.
  • Reduce the heat to low and let the curry simmer for 30-40 minutes, or until the lamb is tender and the sauce has thickened.
  • Season with salt and pepper, to taste.
  • Serve the curry hot, garnished with fresh cilantro.
