Keto Chicken Tikka Masala

About this recipe

This modern twist on the classic Chicken Tikka Masala is perfectly suited for a keto diet. Succulent chicken marinated in a rich blend of spices is grilled and then enveloped in a creamy, spiced tomato sauce. Paired with cauliflower rice, it's a delightful, low-carb rendition of a beloved Indian favorite.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 tablespoons ghee or coconut oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro

Directions

  1. 1

Whisk yogurt, lemon juice, cumin, paprika, turmeric, coriander, cayenne, and salt in a bowl. Coat chicken, cover, and refrigerate for at least 1 hour.

  2. 2

Heat grill to medium-high. Grill chicken for 8-10 minutes, turning occasionally, until charred.

  3. 3

Heat ghee in a skillet over medium heat. Sauté onion until softened.

  4. 4

Add garlic and ginger; cook until fragrant.

  5. 5

Add tomatoes and simmer until sauce thickens.

  6. 6

Stir in cream and cilantro; heat through.

  7. 7

Add grilled chicken; coat with sauce thoroughly.

  8. 8

    Serve hot with cauliflower rice.

Chef's tip

For a charred flavor, finish grilling chicken in the oven under the broiler for 2 minutes after stovetop grilling.
