Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 2 tbsp ghee or coconut oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large bowl, whisk together the yogurt, lemon juice, cumin, paprika, turmeric, coriander, cayenne pepper, and salt. Add the chicken and toss to coat. Cover and refrigerate for at least 1 hour, or overnight.
  • Preheat the grill to medium-high heat. Thread the chicken onto skewers and grill for 8-10 minutes, turning occasionally, until cooked through and lightly charred.
  • Meanwhile, in a large skillet, heat the ghee or coconut oil over medium heat. Add the onion and cook for 5-7 minutes, until softened. Add the garlic and ginger and cook for 1-2 minutes, until fragrant.
  • Add the diced tomatoes and their juices to the skillet and bring to a simmer. Cook for 10-15 minutes, until the sauce has thickened slightly.
