- 4 boneless, skinless chicken breasts
- 8 thin slices of ham
- 4 slices of Swiss cheese
- 1/2 cup almond flour
- 1/2 cup crushed pork rinds
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F.
- Place chicken breasts between two sheets of plastic wrap and pound with a meat mallet until they are an even thickness.
- Lay two slices of ham on each chicken breast, then top with a slice of Swiss cheese.
- Roll up each chicken breast tightly, tucking in the ends to form a neat package.
- In a shallow dish, mix together the almond flour, crushed pork rinds, garlic powder, onion powder, paprika, salt, and black pepper.
- Dip each chicken breast in the beaten eggs, then roll in the almond flour mixture to coat.
