- 1 lb flank steak, sliced thinly against the grain
- 2 tbsp coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snow peas
- 1/2 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 tbsp grated ginger
- 1/4 cup coconut aminos
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
Instructions
- Heat a large skillet over high heat. Add the coconut oil and swirl to coat.
- Add the sliced beef and cook for 2-3 minutes, until browned on all sides. Remove from the skillet and set aside.
- Add the sliced bell peppers, snow peas, and mushrooms to the skillet. Cook for 3-4 minutes, until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet. Cook for 1-2 minutes, until fragrant.
- In a small bowl, whisk together the coconut aminos, rice vinegar, sesame oil, and red pepper flakes.
- Return the beef to the skillet and pour the sauce over the top. Toss everything together until the beef and vegetables are coated in the sauce.
- Season with salt and pepper, to taste.
- Serve hot, garnished with sliced green onions and sesame seeds, if desired.
