About this recipe

Experience the traditional spices of Kerala in this simplified and enticing dish. Perfect for home cooks, it offers a harmonious blend of aromatic spices, coconut, and tender basmati rice. This modern take remains true to its roots but is refined to fit contemporary culinary practices.

Ingredients

  • 1 1/2 cups basmati rice
  • 1 medium onion, finely chopped
  • 2 ripe tomatoes, diced
  • 1/2 cup coconut milk
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 inch piece ginger, grated
  • 2 cloves garlic, minced
  • 1 green chili, finely chopped
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1 tablespoon vegetable oil
  • Salt to taste
  • 2 cups water
  • Fresh cilantro for garnish

Directions

  1. 1

Rinse and soak the basmati rice in cold water for about 15 minutes; drain and set aside.

  2. 2

Heat oil in a large pan over medium heat. Add cumin and mustard seeds and allow them to splutter.

  3. 3

Sauté the onions, ginger, garlic, and green chili until onions become translucent.

  4. 4

Add tomatoes, turmeric, red chili powder, and salt. Cook until the tomatoes are soft.

  5. 5

Stir in the drained rice, ensuring it is well coated with the spice mixture.

  6. 6

Pour in coconut milk and water; bring to a boil, then reduce heat to low and cover.

  7. 7

Simmer until the rice is cooked and all the liquid has been absorbed, about 18-20 minutes.

  8. 8

Sprinkle garam masala and garnish with fresh cilantro before serving hot.
