Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 1/2 cup coconut milk
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 1 green chili, chopped
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  • 1. Rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
  • 2. In a large pan, heat some oil over medium heat. Add the cumin seeds and mustard seeds and let them splutter.
  • 3. Add the chopped onion, ginger, garlic, and green chili. Saute until the onions are translucent.
  • 4. Add the diced tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and mushy.
  • 5. Add the soaked rice and coconut milk. Stir well to combine.
  • 6. Add water as needed and bring to a boil. Reduce heat, cover, and simmer until the rice is cooked through.
  • 7. Once the rice is cooked, sprinkle garam masala and garnish with fresh cilantro.
