  • 1/2 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp saffron threads, crushed and bloomed in 3 tbsp warm water
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red onion, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces

Directions

    Bloom the saffron threads in warm water for 10 minutes.
