Ingredients
- 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup plain yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/4 tsp saffron threads, crushed
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 red onion, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
Instructions
- In a large bowl, whisk together the yogurt, lemon juice, olive oil, garlic, cumin, coriander, turmeric, paprika, cayenne pepper, saffron, salt, and black pepper.
- Add the chicken to the bowl and toss to coat. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat the grill to medium-high heat.
- Thread the chicken, onion, and bell peppers onto skewers.
- Grill the kebabs for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
