Ingredients
- 1 cup tamarind extract
- 2 cups water
- 1 teaspoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fenugreek seeds
- 2 dried red chilies
- 1 sprig curry leaves
- 1 teaspoon turmeric powder
- 1 teaspoon rasam powder
- 1 cup vanilla ice cream
- Salt to taste
- Coriander leaves for garnish
Instructions
- In a large pot, heat oil over medium heat.
- Add mustard seeds, cumin seeds, fenugreek seeds, dried red chilies, and curry leaves. Sauté until the seeds start to splutter.
- Add tamarind extract, water, turmeric powder, and rasam powder. Mix well.
- Bring the mixture to a boil and then reduce the heat to low. Simmer for 10 minutes.
- Remove from heat and let it cool for a few minutes.
- Once cooled, strain the mixture to remove any solids.
- Return the strained liquid to the pot and heat over low heat.
- Add salt to taste and mix well.
- Add vanilla ice cream to the pot and stir until it melts completely.
- Simmer for another 2-3 minutes, stirring occasionally.
- Remove from heat and garnish with coriander leaves.
- Serve hot as a soup or with steamed rice.
