- 2 cups heavy cream
- 1 cup whole milk
- 1 cup granulated sugar
- 1 vanilla bean, split and scraped
- 6 egg yolks
- 1/4 cup vodka
- 1/4 cup Kahlua
Instructions
- In a medium saucepan, combine the heavy cream, whole milk, sugar, and vanilla bean. Heat over medium heat, stirring occasionally, until the mixture comes to a simmer.
- In a separate bowl, whisk together the egg yolks. Slowly pour about 1 cup of the hot cream mixture into the egg yolks, whisking constantly, to temper the eggs.
- Pour the egg mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat and strain the mixture through a fine-mesh sieve into a large bowl. Stir in the vodka and Kahlua.
- Cover the bowl with plastic wrap and chill in the refrigerator for at least 4 hours, or overnight.
- Churn the mixture in an ice cream maker according to the manufacturer's instructions.
- Transfer the ice cream to a freezer-safe container and freeze for at least 2 hours, or until firm.
