  • 2 cups basmati rice
  • 1 lb chicken or lamb, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1/2 tsp saffron strands, soaked in 1/4 cup warm milk
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro leaves
  • Whole spices (cinnamon, cardamom, cloves, bay leaves)
  • Salt to taste

Instructions

  • 1. Wash and soak the basmati rice for 30 minutes.
  • 2. In a large pot, heat ghee and oil. Add the whole spices and sauté until fragrant.
  • 3. Add the sliced onions and cook until golden brown.
  • 4. Add the chopped tomatoes and cook until they soften.
  • 5. Add the meat pieces and cook until browned.
  • 6. Add yogurt, mint, cilantro, and salt. Cook for a few minutes.
  • 7. Layer the soaked rice over the meat mixture. Pour saffron milk on top.
  • 8. Cover and cook on low heat until the rice is cooked and the meat is tender.
  • 9. Serve hot with raita and salad.
