Ingredients

  • 2 cups basmati rice
  • 1 lb chicken or lamb, cut into pieces
  • 1 cup yogurt
  • 2 onions, thinly sliced
  • 4 tomatoes, chopped
  • 1/4 cup ghee
  • 1/4 cup oil
  • 1/2 tsp saffron strands, soaked in 1/4 cup warm milk
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped cilantro leaves
  • 1/2 tsp red chili powder
  • 1 tsp biryani masala
  • 1/4 tsp turmeric
  • 1 tsp ginger garlic paste
  • Salt to taste
  • Whole spices (cinnamon, cardamom, cloves, bay leaves)

Directions

    Wash and soak the basmati rice for 30 minutes.

    Marinate meat with yogurt, red chili powder, biryani masala, turmeric, ginger garlic paste, and salt. Let it rest for 30 minutes.

    Heat ghee and oil in a large pot. Add whole spices and sauté until fragrant.

    Add onions and cook until golden brown. Add tomatoes and cook until they soften.

    Add marinated meat and cook until browned.
