Ingredients
- 2 cups basmati rice
- 1 lb chicken or lamb, cut into pieces
- 1 cup yogurt
- 2 onions, thinly sliced
- 4 tomatoes, chopped
- 1/4 cup ghee
- 1/4 cup oil
- 1/2 tsp saffron strands, soaked in 1/4 cup warm milk
- 1/4 cup chopped mint leaves
- 1/4 cup chopped cilantro leaves
- Whole spices (cinnamon, cardamom, cloves, bay leaves)
- Salt to taste
Instructions
- 1. Wash and soak the basmati rice for 30 minutes.
- 2. In a large pot, heat ghee and oil. Add the whole spices and sauté until fragrant.
- 3. Add the sliced onions and cook until golden brown.
- 4. Add the chopped tomatoes and cook until they soften.
- 5. Add the meat pieces and cook until browned.
- 6. Add yogurt, mint, cilantro, and salt. Cook for a few minutes.
- 7. Layer the soaked rice over the meat mixture. Pour saffron milk on top.
- 8. Cover and cook on low heat until the rice is cooked and the meat is tender.
- 9. Serve hot with raita and salad.
