Ingredients
- 1 lb lean beef, thinly sliced
- 8 oz mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 cup plain Greek yogurt
- 2 tbsp whole wheat flour
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the beef and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the onion and garlic. Cook until softened.
- Add the mushrooms and cook until they release their liquid and start to brown.

- Bring the mixture to a simmer and cook until thickened.

- Return the beef to the skillet and cook until heated through.
- Serve the beef stroganoff over whole wheat noodles or brown rice.
- Garnish with fresh parsley before serving.
