Ingredients
- 500g ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- 1/4 cup pitted kalamata olives
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley, for garnish
- 1/4 cup chopped fresh mint, for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the ground lamb, breadcrumbs, parsley, mint, red onion, garlic, oregano, cumin, coriander, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
- Shape the mixture into small meatballs, about 1 inch in diameter.
- Heat the olive oil in a large oven-safe skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
- Remove the skillet from the heat and add the sliced bell peppers, red onion, zucchini, cherry tomatoes, and kalamata olives. Toss to combine.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
