Ingredients

  • 500g ground lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup pitted kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley, for garnish
  • 1/4 cup chopped fresh mint, for garnish

Instructions

  • Preheat the oven to 200°C (400°F).
  • In a large bowl, combine the ground lamb, breadcrumbs, parsley, mint, red onion, garlic, oregano, cumin, coriander, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  • Shape the mixture into small meatballs, about 1 inch in diameter.
  • Heat the olive oil in a large oven-safe skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.
  • Remove the skillet from the heat and add the sliced bell peppers, red onion, zucchini, cherry tomatoes, and kalamata olives. Toss to combine.
