- 2 pounds lamb shoulder, bone-in
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 lemon, juiced
- 1/4 cup olive oil
- 1 onion, sliced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and sliced
- 1 cup cherry tomatoes
- 1/2 cup chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the minced garlic, dried oregano, dried thyme, lemon juice, and olive oil.
