- 1 tablespoon dried thyme
- 1 lemon, juiced
- 1/4 cup olive oil
- 1 onion, sliced
- 2 carrots, peeled and sliced
- 2 potatoes, peeled and sliced
- 1 cup cherry tomatoes
- 1/2 cup chicken broth
- 100g feta cheese, crumbled
- Salt and pepper to taste
