Ingredients

  • 2 pounds lamb shoulder, bone-in
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 1 onion, sliced
  • 2 carrots, peeled and sliced
  • 2 potatoes, peeled and sliced
  • 1 cup cherry tomatoes
  • 1/2 cup chicken broth
  • 100g feta cheese, crumbled
  • Salt and pepper to taste

Directions

  1. 1

Preheat the oven to 325°F (165°C).

  2. 2

Combine garlic, oregano, thyme, lemon juice, and olive oil in a bowl.

  3. 3

Rub lamb shoulder with the mixture to coat evenly.

  4. 4

Place lamb in a roasting pan and surround with onion, carrots, potatoes, and tomatoes.

  5. 5

Pour chicken broth over the vegetables and season with salt and pepper.

  6. 6

Cover tightly with parchment paper and foil.

  7. 7

Roast for 3 hours until lamb is tender.

  8. 8

Increase oven temperature to 400°F (200°C), top with feta, and roast for 15 more minutes.

  9. 9

Remove from oven, let rest, and serve with juices.

Chef's tip

Ensure to cover the roasting pan well to trap steam and keep the lamb moist.
