Ingredients

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 2 tablespoons seeded Dijon mustard
  • 1/4 cup grated Parmesan cheese
  • Juice of 1 lemon
  • 1 clove garlic, minced

Directions

    Boil the penne pasta following package directions until al dente. Drain and set aside.
