- 1 tsp active dry yeast

- 1/2 lb ground lamb
- 1/2 onion, finely chopped

- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh oregano
- 1/4 cup chopped fresh thyme
- 1/4 cup chopped fresh rosemary
- 1/4 cup chopped fresh sage
Instructions
- In a small bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy.
- In a large mixing bowl, combine the gluten-free flour, salt, and yeast mixture. Knead the dough until smooth, then cover and let it rise for 1 hour.
- In a separate bowl, mix together the ground lamb, onion, bell pepper, garlic, spices, tomato paste, and herbs. Season with salt and pepper.
- Preheat the oven to 450°F (230°C). Divide the dough into 4 equal parts and roll each part into a thin circle.
- Spread the lamb mixture evenly over each dough circle, leaving a small border around the edges.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the lamb is cooked through.
