Ingredients

  • 2 cups gluten-free flour blend
  • 1/2 cup almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup potato starch
  • 1/4 cup flaxseed meal
  • 1/4 cup sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1/4 cup olive oil
  • 1 1/2 cups warm water

Instructions

  • In a large mixing bowl, whisk together the gluten-free flour blend, almond flour, tapioca starch, potato starch, flaxseed meal, sugar, yeast, and salt.
  • Add the olive oil and warm water to the dry ingredients and mix until well combined.
  • Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft-free place for 1 hour.
  • Preheat the oven to 375°F.
  • Grease a 9x5-inch loaf pan with cooking spray.
  • Transfer the dough to the prepared loaf pan and smooth out the top with a spatula.
  • Bake for 45-50 minutes, or until the bread is golden brown and sounds hollow when tapped.
