Modern Lao Fried Rice

About this recipe

Modern Lao Fried Rice is a new twist on the traditional dish that brings the authentic flavors of Laos into your kitchen. Combining fragrant jasmine rice, a medley of colorful vegetables, and perfectly scrambled eggs with a savory blend of sauces, this dish is ideal for a satisfying weeknight meal or as an impressive side dish. Rich in flavor yet simple to prepare, it’s a taste of Laos made easy.

Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup frozen mixed vegetables (carrots, peas, corn), thawed
  • 2 cloves garlic, minced
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 2 large eggs, beaten
  • 2 green onions, chopped
  • 1 tablespoon neutral oil (e.g., vegetable or canola)
  • Salt and pepper to taste

Directions

  1. 1

Heat oil in a large non-stick skillet or wok over medium heat.

  2. 2

Add minced garlic and sauté until fragrant, about 30 seconds.

  3. 3

Stir in mixed vegetables and cook until they are tender, about 3 minutes.

  4. 4

Push vegetables to one side, pour in the beaten eggs, and scramble them until fully cooked.

  5. 5

Add the cooked jasmine rice, breaking up any clumps with a spatula.

  6. 6

Pour in soy sauce, oyster sauce, and fish sauce, mixing thoroughly to coat the rice evenly.

  7. 7

Stir-fry for another 2 minutes, ensuring everything is well combined and heated through.

  8. 8

Season with salt and pepper, garnish with chopped green onions, and serve hot.

Chef's tip

For the best texture, use day-old rice as it holds up better in stir-frying.
