This Vietnamese-style chicken fried rice combines tender chicken with vibrant vegetables and aromatic spices. It's a quick and easy dish perfect for a weeknight dinner, balancing flavors with soy, fish, and oyster sauces to create a delicious meal.

Ingredients

  • 2 cups cooked jasmine rice
  • 1 cup diced chicken breast
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 2 eggs, beaten

Directions

  1. 1

Heat 1 tablespoon vegetable oil in a large skillet over medium heat.

  2. 2

Add minced garlic and sauté until fragrant, about 1 minute.

  3. 3

Add diced chicken breast and cook until no longer pink, about 5 minutes.

  4. 4

Push chicken aside, add the remaining oil, and pour in beaten eggs; scramble until cooked through.

  5. 5

Stir in diced carrots, bell peppers, and frozen peas, cooking for 3-4 minutes until tender.

  6. 6

Add cooked rice and mix thoroughly with chicken and vegetables.

  7. 7

In a bowl, whisk soy sauce, fish sauce, oyster sauce, sugar, and black pepper; pour over rice mixture and combine well.

  8. 8

Garnish with chopped green onions and serve warm.

Chef's tip

For an added depth of flavor, consider marinating the chicken in a bit of the sauce mixture before cooking.
