Ingredients
- 2 cups cooked rice
- 1 cup diced chicken breast
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/2 cup frozen peas
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- 2 eggs, beaten
Instructions
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add diced chicken breast and cook until no longer pink, about 5 minutes.
- Push the chicken to one side of the skillet and add beaten eggs to the other side.
- Scramble the eggs until cooked through, then mix with the chicken.
- Add diced carrots, bell peppers, and frozen peas to the skillet.
- Cook for 3-4 minutes, until the vegetables are slightly tender.
- Add cooked rice to the skillet and stir to combine with the vegetables and chicken.
- In a small bowl, whisk together soy sauce, fish sauce, oyster sauce, sugar, and black pepper.
- Pour the sauce over the rice mixture and stir to coat evenly.
- Cook for an additional 2-3 minutes, until everything is heated through.
- Remove from heat and garnish with chopped green onions.
- Serve hot and enjoy!
