Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken breast
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/2 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • 2 eggs, beaten

Instructions

  • Heat vegetable oil in a large skillet or wok over medium heat.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Add diced chicken breast and cook until no longer pink, about 5 minutes.
  • Push the chicken to one side of the skillet and add beaten eggs to the other side.
  • Scramble the eggs until cooked through, then mix with the chicken.
  • Add diced carrots, bell peppers, and frozen peas to the skillet.
  • Cook for 3-4 minutes, until the vegetables are slightly tender.
  • Add cooked rice to the skillet and stir to combine with the vegetables and chicken.
  • In a small bowl, whisk together soy sauce, fish sauce, oyster sauce, sugar, and black pepper.
  • Pour the sauce over the rice mixture and stir to coat evenly.
  • Cook for an additional 2-3 minutes, until everything is heated through.
  • Remove from heat and garnish with chopped green onions.
