Ingredients
- 6 large egg whites
- 1 1/2 cups granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- Optional: mint leaves for garnish
Instructions
- Preheat the oven to 250°F (120°C). Line three 8-inch round cake pans with parchment paper.
- In a clean mixing bowl, beat the egg whites on medium speed until soft peaks form.
- Gradually add the granulated sugar, 1 tablespoon at a time, while continuing to beat the egg whites. Beat until stiff peaks form and the sugar is fully incorporated.
- Add the white vinegar and vanilla extract to the egg white mixture. Gently fold them in until well combined.
- Divide the pavlova mixture evenly among the prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for 1 hour and 30 minutes, or until the pavlova is crisp and dry. Turn off the oven and leave the pavlova layers inside to cool completely.
- In a separate mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Place one pavlova layer on a serving plate. Spread a layer of whipped cream on top, followed by a layer of mixed berries. Repeat with the remaining pavlova layers, whipped cream, and berries.
- Garnish with mint leaves, if desired. Serve immediately and enjoy!
