Ingredients

  • 1 pound dried black beans
  • 1 pound pork shoulder, cut into chunks
  • 1/2 pound bacon, chopped
  • 1/2 pound smoked sausage, sliced
  • 1/2 pound pork ribs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • Salt and pepper to taste
  • Cooked rice, collard greens, and orange slices for serving

Instructions

  • 1. Rinse the black beans and soak them in water overnight. Drain and set aside.
  • 2. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  • 3. Add the pork shoulder, sausage, and pork ribs to the pot with the bacon fat. Cook until browned on all sides.
  • 4. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 5. Return the bacon to the pot and add the soaked black beans, bay leaves, cumin, paprika, salt, and pepper. Stir to combine.
  • 6. Add enough water to the pot to cover the ingredients. Bring to a boil, then reduce heat to low and simmer for about 2 hours, or until the beans are tender and the flavors have melded together.
  • 7. Remove the bay leaves and any excess fat from the surface of the feijoada.
  • 8. Serve the feijoada hot with cooked rice, collard greens, and orange slices.
