Ingredients

  • 4 packs of ramen noodles
  • 1 lb of pork belly, sliced
  • 4 soft boiled eggs
  • 1 cup of bean sprouts
  • 1 cup of sliced shiitake mushrooms
  • 1 cup of sliced green onions
  • 1 tbsp of sesame oil
  • 1 tbsp of soy sauce
  • 1 tbsp of miso paste
  • 1 tbsp of mirin
  • 4 cups of chicken broth

Instructions

  • In a large pot, bring the chicken broth to a boil.
  • Add the miso paste, soy sauce, mirin, and sesame oil to the pot and stir until well combined.
  • Reduce the heat to low and let the broth simmer for 10 minutes.
  • While the broth is simmering, cook the ramen noodles according to the package instructions.
  • In a separate pan, cook the pork belly until crispy.
  • Soft boil the eggs by placing them in boiling water for 6 minutes, then immediately placing them in ice water to stop the cooking process.
  • Once the broth has simmered for 10 minutes, strain it through a fine mesh strainer to remove any solids.
  • Divide the cooked ramen noodles between four bowls.
  • Pour the hot broth over the noodles.
  • Top each bowl with sliced pork belly, soft boiled egg, bean sprouts, shiitake mushrooms, and green onions.
  • Serve immediately and enjoy!
