Ingredients
- 1 cup cooked sushi rice
- 4 nori sheets
- 1/2 cup injera (Ethiopian flatbread)
- 1/4 cup miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1/2 cup diced avocado
- 1/2 cup diced cucumber
- 1/2 cup diced carrots
- 1/2 cup diced bell peppers
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup toasted sesame seeds
Instructions
- In a small bowl, mix together miso paste, soy sauce, sesame oil, rice vinegar, and honey to make the sushi sauce.
- Place a nori sheet on a bamboo sushi mat or a clean kitchen towel.
- Spread a thin layer of sushi rice evenly over the nori sheet, leaving about 1 inch of space at the top.
- Place a layer of injera on top of the sushi rice.
- Spread a thin layer of the sushi sauce over the injera.
- Sprinkle diced avocado, cucumber, carrots, bell peppers, cilantro, green onions, and toasted sesame seeds over the sauce.
- Roll the sushi tightly using the bamboo mat or kitchen towel, applying gentle pressure to ensure it holds its shape.
- Repeat the process with the remaining nori sheets and ingredients.
- Slice the sushi rolls into bite-sized pieces.
