  • 4 nori sheets
  • 1/2 cup injera (Ethiopian flatbread)
  • 1/4 cup miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1/2 cup diced avocado
  • 1/2 cup diced cucumber
  • 1/2 cup diced carrots
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup toasted sesame seeds

Instructions

  • In a small bowl, mix together miso paste, soy sauce, sesame oil, rice vinegar, and honey to make the sushi sauce.
  • Place a nori sheet on a bamboo sushi mat or a clean kitchen towel.
  • Spread a thin layer of sushi rice evenly over the nori sheet, leaving about 1 inch of space at the top.
  • Place a layer of injera on top of the sushi rice.
  • Spread a thin layer of the sushi sauce over the injera.
  • Sprinkle diced avocado, cucumber, carrots, bell peppers, cilantro, green onions, and toasted sesame seeds over the sauce.
