Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 sweet potato, peeled and chopped
- 1 zucchini, chopped
- 1 cup vegetable broth
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, cinnamon, turmeric, and cayenne pepper and cook for 1 minute, stirring constantly.
- Add the diced tomatoes (with their juices), chickpeas, sweet potato, zucchini, and vegetable broth.
- Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the chopped parsley and season with salt and pepper, to taste.
- Serve hot, with crusty bread or over rice.
