Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 sweet potato, peeled and chopped
  • 1 zucchini, chopped
  • 1 cup vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper, to taste

Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the cumin, coriander, cinnamon, turmeric, and cayenne pepper and cook for 1 minute, stirring constantly.
  • Add the diced tomatoes (with their juices), chickpeas, sweet potato, zucchini, and vegetable broth.
  • Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the vegetables are tender.
  • Stir in the chopped parsley and season with salt and pepper, to taste.
  • Serve hot, with crusty bread or over rice.
