Ingredients
- 6 egg whites
- 1 1/2 cups sugar
- 1/2 tsp cream of tartar
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- Fresh berries for garnish
Instructions
- Preheat oven to 225°F.
- In a large mixing bowl, beat egg whites until foamy.
- Add cream of tartar and continue to beat until soft peaks form.
- Gradually add sugar, one tablespoon at a time, while continuing to beat until stiff peaks form.
- Fold in vanilla extract.
- Spoon meringue onto a baking sheet lined with parchment paper, forming a large circle.
- Bake for 1 1/2 to 2 hours, or until meringue is dry and crisp on the outside.
- Remove from oven and let cool completely.
- In a separate mixing bowl, beat heavy cream until soft peaks form.
- Add powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
- Spread whipped cream over the top of the meringue.
- Garnish with fresh berries.
- Serve immediately.
