Ingredients

  • 6 egg whites
  • 1 1/2 cups sugar
  • 1/2 tsp cream of tartar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh berries for garnish

Instructions

  • Preheat oven to 225°F.
  • In a large mixing bowl, beat egg whites until foamy.
  • Add cream of tartar and continue to beat until soft peaks form.
  • Gradually add sugar, one tablespoon at a time, while continuing to beat until stiff peaks form.
  • Fold in vanilla extract.
  • Spoon meringue onto a baking sheet lined with parchment paper, forming a large circle.
  • Bake for 1 1/2 to 2 hours, or until meringue is dry and crisp on the outside.
  • Remove from oven and let cool completely.
  • In a separate mixing bowl, beat heavy cream until soft peaks form.
  • Add powdered sugar and vanilla extract, and continue to beat until stiff peaks form.
  • Spread whipped cream over the top of the meringue.
  • Garnish with fresh berries.
  • Serve immediately.
