  • 2 lbs beef, cut into cubes
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 1 thumb-sized ginger, grated
  • 1 thumb-sized galangal, grated
  • 2 lemongrass stalks, bruised
  • 4 kaffir lime leaves
  • 1 cinnamon stick
  • 4 cardamom pods
  • 4 cloves
  • 1 star anise
  • 1 can coconut milk
  • 1 cup water
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar
  • Salt, to taste

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the shallots, garlic, red chilies, ginger, and galangal. Sauté until fragrant.
  • Add the beef cubes and cook until browned on all sides.
  • Add the lemongrass, kaffir lime leaves, cinnamon stick, cardamom pods, cloves, and star anise. Stir well to combine.
  • Pour in the coconut milk and water. Bring to a boil.
  • Reduce the heat to low and simmer for 2-3 hours, or until the beef is tender and the sauce has thickened.
  • Stir in the tamarind paste and palm sugar. Season with salt to taste.
  • Continue to simmer for another 30 minutes, stirring occasionally.
