- 2 lbs beef, cut into cubes
- 4 shallots, finely chopped
- 4 cloves garlic, minced
- 2 red chilies, sliced
- 1 thumb-sized ginger, grated
- 1 thumb-sized galangal, grated
- 2 lemongrass stalks, bruised
- 4 kaffir lime leaves
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 1 star anise
- 1 can coconut milk
- 1 cup water
- 2 tablespoons tamarind paste
- 2 tablespoons palm sugar
- Salt, to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the shallots, garlic, red chilies, ginger, and galangal. Sauté until fragrant.
- Add the beef cubes and cook until browned on all sides.
- Add the lemongrass, kaffir lime leaves, cinnamon stick, cardamom pods, cloves, and star anise. Stir well to combine.
- Pour in the coconut milk and water. Bring to a boil.
- Reduce the heat to low and simmer for 2-3 hours, or until the beef is tender and the sauce has thickened.
- Stir in the tamarind paste and palm sugar. Season with salt to taste.
- Continue to simmer for another 30 minutes, stirring occasionally.
- Serve hot with steamed rice.
