  • 1 pound shitake mushrooms, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon cornstarch
  • 1/4 cup vegetable broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 green onions, sliced
  • 1/4 cup chopped cilantro
  • Cooked rice, for serving

Instructions

  • In a small bowl, whisk together soy sauce, sesame oil, garlic, ginger, cornstarch, vegetable broth, oyster sauce, rice vinegar, and honey. Set aside.
  • Heat a large skillet or wok over medium-high heat. Add the sliced shitake mushrooms and cook for 5-7 minutes, until they release their moisture and start to brown.
  • Pour the sauce mixture over the mushrooms and stir to coat. Cook for an additional 2-3 minutes, until the sauce thickens.
  • Remove from heat and stir in the sliced green onions and chopped cilantro.
  • Serve the shitake mushroom stir-fry over cooked rice.
