Ingredients
- 500g red chillies
- 4 cloves of garlic
- 1 tablespoon salt
- 1 tablespoon sugar
- 2 tablespoons fish sauce
- 2 tablespoons rice vinegar
Instructions
- 1. Wash the chillies and remove the stems.
- 2. Slice the chillies and garlic cloves.
- 3. In a bowl, mix the chillies, garlic, salt, and sugar.
- 4. Cover the bowl and let it sit at room temperature for 2-3 days, stirring once a day.
- 5. After 2-3 days, the mixture should be fermented and slightly sour.
- 6. Transfer the mixture to a blender or food processor.
- 7. Add fish sauce and rice vinegar to the blender.
- 8. Blend until smooth.
- 9. Taste and adjust the seasoning if needed.
- 10. Transfer the sauce to a sterilized jar and refrigerate.
- 11. The sauce can be stored in the refrigerator for up to 1 month.
