Ingredients

  • 500g red chillies
  • 4 cloves of garlic
  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 2 tablespoons fish sauce
  • 2 tablespoons rice vinegar

Instructions

  • 1. Wash the chillies and remove the stems.
  • 2. Slice the chillies and garlic cloves.
  • 3. In a bowl, mix the chillies, garlic, salt, and sugar.
  • 4. Cover the bowl and let it sit at room temperature for 2-3 days, stirring once a day.
  • 5. After 2-3 days, the mixture should be fermented and slightly sour.
  • 6. Transfer the mixture to a blender or food processor.
  • 7. Add fish sauce and rice vinegar to the blender.
  • 8. Blend until smooth.
  • 9. Taste and adjust the seasoning if needed.
  • 10. Transfer the sauce to a sterilized jar and refrigerate.
  • 11. The sauce can be stored in the refrigerator for up to 1 month.
