Ingredients

  • 2 large potatoes
  • 4 cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup warm water

Instructions

  • 1. Peel and boil the potatoes until they are soft. Mash them and set aside.
  • 2. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
  • 3. Add the mashed potatoes, vegetable oil, and warm water to the dry ingredients. Mix well until a dough forms.
  • 4. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.
  • 5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  • 6. Punch down the dough and divide it into small balls. Roll each ball into a flat circle, about 1/4 inch thick.
  • 7. Heat a non-stick skillet over medium heat. Cook each bread circle for about 2 minutes on each side, until golden brown and cooked through.
  • 8. Serve the Egyptian potato bread warm with your favorite spreads or dips.
  • 9. Enjoy!
