Ingredients
- 2 large potatoes
- 4 cups all-purpose flour
- 2 teaspoons active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 1/4 cup vegetable oil
- 1 cup warm water
Instructions
- 1. Peel and boil the potatoes until they are soft. Mash them and set aside.
- 2. In a large mixing bowl, combine the flour, yeast, sugar, and salt.
- 3. Add the mashed potatoes, vegetable oil, and warm water to the dry ingredients. Mix well until a dough forms.
- 4. Knead the dough on a floured surface for about 5 minutes, until it becomes smooth and elastic.
- 5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- 6. Punch down the dough and divide it into small balls. Roll each ball into a flat circle, about 1/4 inch thick.
- 7. Heat a non-stick skillet over medium heat. Cook each bread circle for about 2 minutes on each side, until golden brown and cooked through.
- 8. Serve the Egyptian potato bread warm with your favorite spreads or dips.
- 9. Enjoy!
