Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 2 cups water
  • 2 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 12 small corn tortillas
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced onion
  • Lime wedges, for serving

Instructions

  • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  • Add the beef chuck roast to the pot and brown on all sides.
  • In a separate pot, bring the beef broth and water to a boil. Add the dried guajillo chilies and dried ancho chilies. Let them simmer for 10 minutes, then remove from heat and let cool slightly.
  • Transfer the chilies and some of the broth to a blender. Blend until smooth.
  • Pour the blended chili mixture into the pot with the beef chuck roast. Add the ground cumin, dried oregano, smoked paprika, salt, black pepper, ground cloves, and ground cinnamon. Stir to combine.
  • Cover the pot and let the birria simmer on low heat for 3-4 hours, or until the beef is tender and easily shreds with a fork.
  • Once the beef is cooked, remove it from the pot and shred it using two forks.
  • Heat a skillet over medium heat and warm the corn tortillas on both sides.
  • To assemble the tacos, place a spoonful of the shredded beef onto each tortilla. Top with chopped fresh cilantro and diced onion. Serve with lime wedges for squeezing over the tacos.
