Ingredients

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 2 cups water
  • 2 dried guajillo chilies, seeded and toasted
  • 2 dried ancho chilies, seeded and toasted
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cinnamon
  • 12 small corn tortillas
  • 1/2 cup shredded Oaxaca cheese
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced onion
  • Lime wedges, for serving

Directions

    Heat vegetable oil in a large pot over medium heat. Sauté onion and garlic until softened.

    Brown the beef chuck roast on all sides in the pot.

    Simmer beef broth and water, adding toasted chilies. Let them soak until softened.

    Blend chilies with some broth until smooth; add to the beef pot along with spices.

    Cover and simmer the mixture for 4 hours until beef is tender and shreds easily.
