Ingredients
- 3 pounds beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- Season the beef roast with salt and pepper.
- Heat a large Dutch oven over medium-high heat and add some oil.
- Sear the roast on all sides until browned.
- Remove the roast from the Dutch oven and set aside.
- In the same Dutch oven, add the onion, garlic, carrots, and celery.
- Cook until the vegetables are softened.
- Add the beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary.
- Stir well to combine.
- Return the roast to the Dutch oven and cover with the lid.
- Transfer the Dutch oven to the preheated oven and cook for about 3 hours, or until the roast is tender.
- Remove the roast from the Dutch oven and let it rest for a few minutes before slicing.
- Serve the pot roast with the vegetables and sauce.
