Ingredients

  • 3 pounds beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 325°F (165°C).
  • Season the beef roast with salt and pepper.
  • Heat a large Dutch oven over medium-high heat and add some oil.
  • Sear the roast on all sides until browned.
  • Remove the roast from the Dutch oven and set aside.
  • In the same Dutch oven, add the onion, garlic, carrots, and celery.
  • Cook until the vegetables are softened.
  • Add the beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary.
  • Stir well to combine.
  • Return the roast to the Dutch oven and cover with the lid.
  • Transfer the Dutch oven to the preheated oven and cook for about 3 hours, or until the roast is tender.
  • Remove the roast from the Dutch oven and let it rest for a few minutes before slicing.
