Ingredients

  • 2 pounds fresh tomatoes
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • 1/4 cup fresh basil leaves, chopped

Instructions

  • 1. Bring a large pot of water to a boil. Score an 'X' on the bottom of each tomato and blanch them in the boiling water for 1 minute. Remove the tomatoes and place them in a bowl of ice water to cool. Peel off the skins and chop the tomatoes.
  • 2. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • 3. Add the chopped tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using) to the saucepan. Stir in the tomato paste.
  • 4. Reduce the heat to low and simmer the sauce for 30 minutes, stirring occasionally.
  • 5. Remove the sauce from the heat and stir in the fresh basil leaves.
  • 6. Use a blender or immersion blender to puree the sauce until smooth.
  • 7. Serve the marinara sauce over your favorite pasta or use it as a dipping sauce for breadsticks.
