Ingredients
- 1 3/4 cups almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- Food coloring (optional)
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1-2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, sift together the almond flour and powdered sugar.
- In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the almond flour mixture into the beaten egg whites until fully combined. If desired, add food coloring and gently fold until evenly distributed.
- Transfer the mixture to a piping bag fitted with a round tip. Pipe small circles onto a baking sheet lined with parchment paper.
- Let the piped circles sit at room temperature for about 30 minutes to form a skin. Preheat the oven to 300°F (150°C) during this time.
- Bake the macarons for 15-18 minutes, or until they are set and easily lift off the parchment paper. Let them cool completely before removing from the baking sheet.
- In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, and continue beating until smooth and fluffy.
- Pair up the cooled macaron shells based on size and shape. Pipe or spoon a small amount of the buttercream filling onto one shell, then gently press another shell on top to create a sandwich.
- Repeat with the remaining macaron shells and filling.
- Store the filled macarons in an airtight container in the refrigerator for at least 24 hours before serving to allow the flavors to meld.
