Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cooked black beans
- 1 cup cooked chickpeas
- 1 cup cooked lentils
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- 1. Rinse the quinoa under cold water.
- 2. In a medium saucepan, bring the water to a boil.
- 3. Add the quinoa to the boiling water and reduce heat to low.
