- 6 large eggs
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup diced ham or bacon (optional)
- 1/4 cup milk
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook until they are golden brown and tender, about 10 minutes. Remove the potatoes from the skillet and set aside.
- In the same skillet, add the diced onion and bell pepper. Cook until they are softened, about 5 minutes. If using ham or bacon, add it to the skillet and cook until it is crispy.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and paprika.
- Grease a baking dish with cooking spray or butter. Layer half of the cooked potatoes in the bottom of the dish. Top with half of the cooked onion, bell pepper, and ham or bacon (if using). Sprinkle half of the shredded cheese over the top.
- Pour half of the egg mixture over the ingredients in the baking dish. Repeat the layers with the remaining potatoes, onion, bell pepper, ham or bacon, cheese, and egg mixture.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
- Serve warm and enjoy!
