Ingredients
- 1 pound beef sirloin, thinly sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 8 ounces egg noodles, cooked
- Fresh parsley for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the beef sirloin and cook until browned. Remove from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent.
- Add the sliced mushrooms and cook until they release their moisture and start to brown.
- Sprinkle the flour over the mushrooms and stir to coat.
- Slowly pour in the beef broth, coconut milk, soy sauce, and Dijon mustard. Stir well to combine.
- Bring the mixture to a simmer and cook until the sauce thickens.
- Return the cooked beef sirloin to the skillet and stir to coat with the sauce. Cook for an additional 2-3 minutes to heat through.
- Season with salt and pepper to taste.
- Serve the dairy-free beef stroganoff over cooked egg noodles.
- Garnish with fresh parsley before serving.
