Ingredients
- 2 lbs pork shoulder, trimmed and cut into chunks
- 1 cup orange juice
- 1/2 cup lime juice
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro
- 12 small corn tortillas
- 1 avocado, sliced
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
- In a large bowl, combine orange juice, lime juice, olive oil, garlic, cumin, oregano, salt, pepper, and cilantro. Add pork chunks and toss to coat. Cover and refrigerate for at least 2 hours, or overnight.
- Preheat oven to 325°F. Transfer pork and marinade to a baking dish. Cover with foil and bake for 2-3 hours, until pork is tender and easily shredded.
- Remove pork from oven and shred using two forks. Heat a skillet over medium heat and warm tortillas for about 30 seconds on each side.
- To assemble tacos, fill each tortilla with shredded pork, avocado slices, red onion, and chopped cilantro. Serve with lime wedges on the side.
