Ingredients
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 1/4 cup raisins
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- Lemon wedges for serving
Instructions
- In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the carrot, zucchini, and red bell pepper to the skillet. Cook for another 5 minutes, until the vegetables are tender.
- Stir in the cumin, coriander, turmeric, paprika, cinnamon, salt, and pepper. Cook for 1 minute, until fragrant.
- Add the cooked couscous to the skillet and stir to combine with the vegetables and spices. Cook for another 2 minutes, until heated through.
- Remove from heat and stir in the raisins, parsley, and cilantro. Season with additional salt and pepper if needed.
- Serve the couscous Moroccan hot, with lemon wedges on the side for squeezing over the dish.
