Ingredients

  • 1 cup couscous
  • 1 1/2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup raisins
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • Lemon wedges for serving

Instructions

  • In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the carrot, zucchini, and red bell pepper to the skillet. Cook for another 5 minutes, until the vegetables are tender.
  • Stir in the cumin, coriander, turmeric, paprika, cinnamon, salt, and pepper. Cook for 1 minute, until fragrant.
  • Add the cooked couscous to the skillet and stir to combine with the vegetables and spices. Cook for another 2 minutes, until heated through.
  • Remove from heat and stir in the raisins, parsley, and cilantro. Season with additional salt and pepper if needed.
  • Serve the couscous Moroccan hot, with lemon wedges on the side for squeezing over the dish.
