Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 4 slices bacon, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups dry white wine
- 1 cup chicken broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- 1 tbsp butter
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix together flour, salt, and pepper. Dredge chicken in flour mixture, shaking off excess.
- In a large Dutch oven or oven-safe pot, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.
- Add chicken to the pot and cook until browned on all sides, about 5 minutes per side. Remove chicken and set aside.
- Add onion and garlic to the pot and cook until softened, about 5 minutes.
- Add mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
- Add wine, chicken broth, tomato paste, thyme, and bay leaf. Bring to a simmer and cook for 5 minutes.
- Return chicken and bacon to the pot. Cover and bake in the oven for 45 minutes.
- Remove from oven and stir in butter and parsley. Serve hot.
