Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups dry white wine
  • 1 cup chicken broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tbsp butter
  • 1 tbsp chopped fresh parsley

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, mix together flour, salt, and pepper. Dredge chicken in flour mixture, shaking off excess.
  • In a large Dutch oven or oven-safe pot, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside.
  • Add chicken to the pot and cook until browned on all sides, about 5 minutes per side. Remove chicken and set aside.
  • Add onion and garlic to the pot and cook until softened, about 5 minutes.
  • Add mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
  • Add wine, chicken broth, tomato paste, thyme, and bay leaf. Bring to a simmer and cook for 5 minutes.
  • Return chicken and bacon to the pot. Cover and bake in the oven for 45 minutes.
  • Remove from oven and stir in butter and parsley. Serve hot.
