Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 cups dry white wine
  • 1 cup chicken broth
  • 1 tbsp brandy
  • 1 tsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tbsp butter
  • 1 tbsp chopped fresh parsley

Directions

    Preheat oven to 350°F (175°C).

    Mix flour with salt and pepper, and coat chicken pieces, shaking off the excess.

    In a large Dutch oven, cook bacon over medium heat until crispy; remove and set aside.

    Brown chicken in the bacon fat for about 5 minutes per side; remove and set aside.

    Sauté onion and garlic until softened, about 5 minutes, then add mushrooms and cook another 5 minutes.

    Deglaze with brandy, then add wine, chicken broth, tomato paste, thyme, and bay leaf, simmer for 5 minutes.
