Ingredients

  • 2 cups shredded coconut
  • 1 cup almond flour
  • 1 1/2 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • Food coloring (optional)

Instructions

  • Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded coconut, almond flour, and powdered sugar. Mix well.
  • In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.
  • Fold the beaten egg whites into the coconut mixture. Add the vanilla extract, almond extract, and salt. Mix until well combined.
  • If desired, add a few drops of food coloring to the batter and gently fold it in.
  • Transfer the batter to a piping bag fitted with a round tip. Pipe small rounds onto the prepared baking sheet, spacing them about 1 inch apart.
  • Tap the baking sheet on the counter a few times to release any air bubbles. Let the macarons sit at room temperature for about 30 minutes to form a skin.
  • Bake the macarons for 15-18 minutes, or until they are set and have a slight golden color. Remove from the oven and let them cool completely on the baking sheet.
  • Once the macarons are cool, carefully remove them from the parchment paper.
  • To make the filling, you can use your favorite jam, chocolate ganache, or buttercream. Place a small amount of filling on the flat side of one macaron and sandwich it with another macaron.
  • Repeat with the remaining macarons.
