Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups coconut milk
  • 1/2 cup whole milk
  • 3/4 cup granulated sugar
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup sweetened shredded coconut, toasted

Instructions

  • Preheat the oven to 350°F.
  • In a medium bowl, combine the chocolate cookie crumbs, melted butter, and 1/2 cup of sweetened shredded coconut. Mix well.
  • Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then let cool completely.
  • In a medium saucepan, whisk together the cornstarch, salt, coconut milk, whole milk, granulated sugar, and egg yolks. Cook over medium heat, whisking constantly, until the mixture thickens and comes to a boil, about 10 minutes.
  • Remove from heat and stir in the butter and vanilla extract until smooth.
  • Pour the filling into the cooled crust and smooth the top with a spatula. Refrigerate for at least 2 hours, or until set.
  • In a medium bowl, whip the heavy cream until stiff peaks form. Spread the whipped cream over the top of the pie and sprinkle with the toasted coconut.
