Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 1/2 cup chocolate chips
  • 1/4 cup ghee
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp black pepper
  • 1/2 cup raisins
  • 1/2 cup cashews
  • 1/4 cup fresh cilantro, chopped

Instructions

  • Rinse the rice in cold water until the water runs clear.
  • In a medium saucepan, bring the water to a boil. Add the rice and reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
  • While the rice is cooking, melt the chocolate chips in a double boiler or in the microwave.
  • In a large skillet, heat the ghee over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and ginger and cook for another minute.
  • Add the cumin, coriander, turmeric, cinnamon, cardamom, cloves, nutmeg, and black pepper. Cook for 1-2 minutes, or until fragrant.
  • Add the raisins and cashews and cook for another 2-3 minutes.
  • Add the cooked rice and melted chocolate to the skillet and stir until well combined.
  • Garnish with fresh cilantro and serve hot.
