Ingredients
- 1 cup basmati rice
- 2 cups water
- 1/2 cup chocolate chips
- 1/4 cup ghee
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- 1/4 tsp cardamom
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/4 tsp black pepper
- 1/2 cup raisins
- 1/2 cup cashews
- 1/4 cup fresh cilantro, chopped
Instructions
- Rinse the rice in cold water until the water runs clear.
- In a medium saucepan, bring the water to a boil. Add the rice and reduce heat to low. Cover and simmer for 18-20 minutes, or until the rice is tender and the water has been absorbed.
- While the rice is cooking, melt the chocolate chips in a double boiler or in the microwave.
- In a large skillet, heat the ghee over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and ginger and cook for another minute.
- Add the cumin, coriander, turmeric, cinnamon, cardamom, cloves, nutmeg, and black pepper. Cook for 1-2 minutes, or until fragrant.
- Add the raisins and cashews and cook for another 2-3 minutes.
- Add the cooked rice and melted chocolate to the skillet and stir until well combined.
- Garnish with fresh cilantro and serve hot.
